Well it certainly got QP's (my 9 year old son) approval. He was talking about it this morning and suggesting we use it to make cup cakes.

Lots of baking here today.
I'm going to try the panettone recipe from Dan L and Nigellas tiramisu...I really want an excuse to try her chocolate Guinness cake that I've heard v good things about...but that's not very seasonal?? Should be for st Patrick's day really? What ya think?

Scones nearly ready to come out...smelling lovely. :-)

If mince pies were as good as Guinness cake we'd eat them all year round. Go for it pint :)

I can almost smell those scones from here. Might be tempted to make some myself :)

I've got little shortbreads coming out now. Made with rice flour. Maybe I'm turning into a closet scottish granny?

Would rice flour get the thumbs up from over the border?

If it's the gritty stuff they'd call it "ground rice" and tell you that semolina is better, runnyeyes.

And if it's the powdery stuff, they'd say, "Whit? Ye didnae. Nae sich hing, hen," and ask if you meant cornflour :)

Most proper Scottish grannies would use plain white flour, salted butter and white caster sugar, though there's one in every Women's Guild who comes over all cheffy and has a "secret ingredient".

(I've made shortbread with rice flour. It tasted OK - it always will provided the fat is all butter and the flour is a relatively flavourless one and not something horrid like buckwheat - but was a lot crumblier than wheatflour shortbread.)

I'll bet yours is delicious :)

Ahhh that's the secret. The recipe was 40 g of ground rice flour to 130 g of plain.

It's a bit crunchy, but nice and buttery.
I like the sound of corn flour..will try that next time..

I have made Nigellas Guinnes cake for a St Patricks/birthday party - it went down a treat. I was so chuffed that i made something that turned out so well and everyone raved about
