Don't see why not - slice and wrap individually with grease proof and foil - that's what I do with my malt loaf and it thaws ok

I freeze muffins. Mind you I normally eat them pretty fast...I always have loads of overripe bananas, I just made really nice banana oat muffins but everyone refuses to eat them. Gits. I also made banana pancakes a few times and they are scrummy. Pity I'm the only banana fan in the house!

My first attempt at the christmas pudding chocolate truffles. We opted for icing for the holly. I'm not quite delicate enough with the holly and QP did some too but think they look pretty good on the whole. Just about to test one with a cuppa.

Raptors claws are coming to town
Those are lovely, elfpint. That boy will go far. Look where Dave A's muffins (for which I can personally vouch) took him!

I made a load of shortbread last night. Half of it just boring old one part sugar, two parts butter, three parts flour, cut into rounds. I added some toasted chopped hazelnuts to the other half and used my son's new star cutter. I thought the tips of the stars might overcook, but I obviously got the oven temperature low enough.

eL Bee! wants to add shortbread to his repertoire :)

Ivor's Christmas presents from college included some cake and bread mixes. He was horrified when he started doing work experience in the college kitchen and discovered that they used packet mixes instead of proper ingredients, but has accepted that cutting corners is essential in institutional catering.

I did shortbread again yesterday. Tried the cornflour/ icing sugar/ all in the food processor method. Rolled it up into a sausage shape, and put it in a bag that contained Demerara sugar, then in the fridge while I tidied the kitchen. Out the fridge, and then sliced into thick rounds. Dusted in icing sugar after baking.
Very very easy!

Will half dip them in choc later.

That Dan Lepard panettone is excellent.

I did one traditional, dried fruit, peel and choc chips.
I did another with chopped ginger, raaisins and choc chips ...for the anti-peel brigade.

I now have 12 egg whites!
