I had the classic stereotypical sassenach-who's-never-eaten-haggis opinion of haggis (i.e. "You'll never catch me eating that"). Then I got invited to a Burns Night event, hosted by the Kidderminster & District Scottish Society. My first surprise was learning that Kidderminster actually had a Scottish Society. My second was discovering that when I actually ate haggis, it was truly delicious.

I remember my wife doing something like that with an ox (aka cow!) tongue, then pressing it in a bowl with a plate on top, and using a house brick as a weight! It was before we were married, for her Dad.

My dad used to occasionally buy a whole ox tongue and boil and press it. Was never my favourite cut of meat anyway.

I thought the haggis were farmed/bred on round hills/ With 2 short legs, 2 long legs, so they can walk round and round.
But I like haggis ... and also, I've learnt, it goes well with with baked beans for breakfast (blame buffet breakfasts in Scottish hotels). Although they didn't toast it or serve whisky. Or start singing or quoting Rabbie Burns.

I think farmed haggis must be selectively bred to have four short legs so that they can live in fields and not be blown over in the wind. I shall ask the lass at the deli counter next time I'm in Cranston's whether I can have some haggis legs for making stock, and take the risk that she'll laugh at me and say they give them away for dog chews.

I used to catch the bus to work outside MacSweens the butcher. They made a decent haggis, but the smell was offal.
