Shades
My Mum used to buy tripe now and then, I didn't eat it. I can remember that she'd buy a pigs head, not very often though. She was a brilliant cook but I declined to eat that too. |

Once in Lyon, I opted to stop in a bouchon & try their andouillette. The owner may have spotted I was English and said (something like) "Etes-vous sûr? Savez vous ce que c'est?" To which I responded "Oui, je sais, je voudrais l'essayer" Armed with a pitcher of house red wine (which would have stripped paint, so a good pairing), and quite a bit of bread, I reckon I ate about half. Once was enough. I never felt the need to try it again. And my french colleagues at work thought it very funny - they assured me they never ate it and would never have taken me or suggested I try it. (it is the region speciality, or so the guide books say) |

I MUST have told you about the one time I tried to cook tripe. I knew from the Chalet School books that it should be "stewed in milk", but not how long. I ended up with a pan of milky glue and a house that stank for ... "months" is probably a false memory, but definitely for the rest of the day.

I assume andouilllette is to the French what haggis is to the Scots. A trick they play on tourists. (Haggis is one of the few forms of offal that I don't mind eating.)

I have never had tripe but I have eaten cow's intestine when I was visiting Zimbabwe and was taken by my friend (doing voluntary nursing there) to stay with an indigenous family for a night.

Tripe is horrid! Once, never again, in Italy... My friend feeds her dog raw tripe. After which he doesn't understand why we don't want him near us, poor thing! He once nudged my leg and I had to wash my jeans on arrival home 🤢 |

We used to sometimes get 'Elder' from a stall at the market, which I remember also being eaten with lots of vinegar - cooked cow's udder. I think it is/was a south Lancashire thing, as indeed is tripe, there were still a few UCP tripe shops left when I was a small child.
