The recipe/method for the Miracle overnight white loaf is very similar to one in a similar baking-saved-my-life-cookery book: Ella Risbridger's Midnight Chicken: & Other Recipes Worth Living For.

I think Ella calls hers Maslin Bread - it's similarly baked in a casserole dish and not kneaded or even proved.

I like story book cookbooks so may well seek out this new one. Get the Guardian but not the Observer so I hadn't seen the article.

Is the maslin loaf the same as the doris grant? Awful thing!

I never knead dough. Just some gentle stretching and a bit of time.

I don't usually knead bread either, or if I do it is more to make sure it is properly mixed rather than proper kneading.

That is with sourdough, mixed in the evening while I'm cooking dinner and baked sometime in the morning.

Dunno, jacdaw - I've not baked it but one of Ella Risbridger's other loaves has become my absolute favourite. Bit more complicated, more ingredients but fabulous enough to eat without butter or indeed anything. I tend to just have a small piece of cheese with a slice or two to make perfect between track sessions food.

Wicked Stepmother Black Bread. Bit burnt here!
