I bet that tastes lovely! I've added the link to the recipe in the articles over there >> It's a bit like Andrew Whitley's, but he mixed the yeast, liquid and just some of the flour to make a leaven which is left overnight, then you add the rest of the flour and knead. Less yeast than conventional recipes and a slow prove help the gluten to develop in a way which is more digestible - or so I've read. Here's his article: theguardian.com My sourdough starter is feeling a bit neglected and the colder weather doesn't help. I put the dough earlier on top of the oven when I had something in it. Not sure that was a good idea but it's certainly woken it up a bit. I kept meaning to feed the starter and make crackers rather than bread; will do that tonight and hopefully it'll revive after a couple of feeds. |

Our sourdough starter died. While I'm waiting for a new one to be ready, I tried out a Grant loaf. It was pretty successful, thanks to this thread for introducing me to the concept! |

That looks good Jenelopy! I fed my starter earlier in the week and then made crackers with most of it (I only keep a tiny bit in a jar in the fridge - what Bake with Jack calls "scrapings"). Added 100g strong white flour to 160g woken-up starter (which would be 80g rye flour, 80g water), worked in some olive oil and left it overnight in the fridge. Rolled pieces thinly using a pasta machine, spritzed with water, sprinkled with salt flakes and baked for 9 mins. Good with soft cheese or veggie pate. Then I fed it again last night and it seems much happier so fingers crossed for a decent loaf tomorrow. |

You know in bake off when they make a roulade that cracks do much when they roll it that it’s basically strips of sponge held together with cream? I made that ![]() Tasted great though and the birthday girl enjoyed it ![]() |
