We decided not to have a full-on Christmas cake this year, so I made Paul Hollywood’s version of Melton Hunt cake. Only a six inch tin, it will just suit us. Probably should have made it a week or two ago, but it will almost certainly be at least Tuesday before we cut it, so it will have a few days to mature

Similar to Dundee cake, I guess. You have to drink port or sherry with it. (Well, you don’t HAVE to, but . . .) There’s recipes online, mine’s the three egg, six inch version.
