Parkin update:



Used 2.5 tsp of ground ginger instead of the recipe's 1 tsp. As predicted, very little discernable taste of ginger. But it's lovely and moist, not too sweet, and, best of all, the recipe did not require creaming of the butter.

I appear to have had 3 slices of it for tea instead of proper food. I'm going to treat it as medicinal; a treat after having a needle poked in my arm this morning.

poppyH - it isn't in the links, but my go-to banana cake recipe is: nzherald.co.nz

I replace the butter with 100g of sunflower or canola oil, and make a cocoa powder, icing sugar and water icing (we used to call it glace icing when i was a kid)

You shouldn't eat Parkin until it's at least three days old quimby! You may find the taste develops if you can bear to leave it.

Apple pie muffins today.



And the Demerara sugar packet had a recipe for something called flapjack cookies, so I’ll be giving those a try in due course :-)
