The Pin Lady
I made a good gluten free chocolate cake with kidney beans - no flour at all. Think it was in one of hugh fernley wittingstalls books. Light and Easy, I think. It was lovely and fudgey.

Someone baked that for me once Heinzster and whilst I appreciated them making the effort to bake gf I was not impressed with the cake - could have been the baker I guess. 175g soft butter 175g caster sugar 2 eggs, beaten 175g gf self raising sifted with a pinch of xanthan gum Grated rind 1 lemon 4 tbsp milk 1 tbsp lemon juice Glaze - juice of 1 lemon, 3 tbsp caster sugar (you can use icing but I like the crunch) Preheat oven to 160C/gas 3. Grease/line a 2lb loaf tin. Beat butter and sugar until light and creamy, gradually beat in eggs adding a little of the flour if it's curdling. Fold in flour and lemon zest followed by milk and lemon juice. Pour into tin and level the top. Bake for 55 mins or until skewer comes out clean. Meanwhile gently warm lemon juice and sugar. Once cake is baked prick all over with skewer, pour over glaze. Leave in tin for fifteen minutes before turning out. |

My first ever attempt at a Simnel cake, but did it as a traybake after finding the recipe on the Lakeland website. It looks good but not yet sampled so might be dreadful 😁 |

I don't think I'll be baking a simnel cake this year as we still have xmas cake left - usually unheard of. I usually do it as a loaf cake with a layer of marzipan through the middle too but then I love marzipan.

I don't think I'll be doing one as no one likes marzipan except me and I don't need any extra calories. Mum might make one.
