You will marvel at just how much cheese features in this recipe, and wonder if the dough will ever come together. It will - maybe need a splash of water - but these are divine. I've posted the original recipe and my notes for how I changed it. Note that if you make the large quantity you will need a lot of surfaces for cooling racks and unless you have many baking trays, you will need to rotate them.
