Here are the photos as promised of my baking yesterday Fruit Loaf facebook.com Hot Cross Buns facebook.com here is another fruit loaf and another tray of buns. The buns are slightly overdone, but can correct that next time and will use Icemaidens kneading and mixed spice tip:-) |

It won't let me look at your pics girlie I made apple and rasp muffins. Realised I only had wee cupcake cases so made 18 small muffins as opposed to the 10 they suggested. They are good. |

Mr L's birthday soon and coffee and walnut cake is going to be the order of the day. I'm thinking of adapting the lemon drizzle cake recipe I use, which has ground almonds in it, but obviously substituting coffee flavour for the lemon (I know how to work stuff out ;-)). I want it to have a reasobaly strong coffee flavour but not to be bitter. Any ideas about the spoon quantity of cold coffee that would be best for the cake? I'm working with approx 250g butter, 200g s/r flour, 50g ground almonds and 4 eggs.
