I made a lovely cake using instant coffee JenL, dissolved in a little hot water. I followed the Primrose Cafe Cup Cake book (?) recipe which stated 1.5 tbsp instant espresso (but I used normal instant) coffee to 2 tbsp of hot water.

That was to 175g butter flour sugar etc, so maybe if you used 2 tbsp coffe to 250gs rations ????

I do 3 tsp coffee powder to 3 tbsp water for a 3- 4 egg sponge mix

I just spotted this thread and coincidentally made my first cake in the oven I inherited when I bought my flat.

I made 2 of Dan Lepard's melted butter banana cakes in loaf tins and they are v light and lovely.

My mum's given me her old Sunbeam Mixmaster. I love it!

Made a nice ginger and golden syrup loaf yesterday that was gobbled up quickly at work.
Planning a nutty toffee cake at the weekend....
Working my way through Rachel Allen's 'Cake' book.
No complaints so far!

Thanks, Clueless. I used 2 tblspns but it didn't look quite the right colour so I added a third one and it has come out lovely :-)

Thanks to everyone on this thread, especially the bread makers among you. I have been inspired by your posts and recommendations for the Panasonic bread maker and have just ordered a Panasonic SD-2501 from Tesco Direct. Got what I think is a a good price (£121.47) using a £5 discount voucher and my wife's 10% employee discount. Can't wait to pick it up and getting started!
