I made some Ultra Flapjacks on Friday for a race yesterday - they loved them and we ran out before all the runners were through the CP.

JenL asked about the Artisan Bread in Five Minutes a Day thing - no I haven't tried it but it looks interesting. I have frozen pizza dough for a few days and it turned out OK. Although if I know I will be making bread later I start a 'sponge' in the morning and finish the bread later - the sponge bit is all the water, yeast and half the flour stirred up and left all day/night and then the rest of the flour and salt is added and everything finished the standard Dan Lepard way with 3 quick kneads and two rises. Yesterday I did the Hairy Biker's provencal bread wp.me and they recommend leaving the 'sponge' in the fridge overnight, I can't wait that long so it was just sitting about all day until I got round to it, and then finished with Dan Lepard 3 quick kneads and the rising recommended by the Hairy Biker's. And it makes ginormous soft loaves. I left out the herbs because it was dark and I couldn't be bothered to go out and find them in the garden with a torch, but left in the fennel seeds this time. Eating now with cheese and homemade pickle. Nom Nom! |

Sounds fabulous ice maiden...you domestic goddess you!! I have made a nice nutty toffee cake for work tomorrow. Mmmm...I do love cake (and most food actually :-)) |

I was wondering what was in ultra flapjacks too! I had a fabulous ginger flapjack at my favourite cycling cafe yesterday...mmmm....worth cycling for..totally! |

150g dried cherries (or similar) 75g whole almonds 75g whole brazils 75g walnuts 75g pumpkin seeds 250g rolled oats 200g butter 170g clear honey 225g brown sugar Preheat oven to Gas 6/7 or 200 1. Cut parchment to fit baking sheet 2. Chop all nuts and cherries. Mix cherries, nuts and oats. 3. Put honey, sugar and butter in a pan and bring to a slow boil and cook for 5-8mins (watch out for burning) 4. Combine honey mixture with oats, nuts & cherries and stir well. 5. Turn out onto baking sheet and pat down. 6. Bake on middle shelf for 12-15min until golden brown. 7. Cool on a wire rack then cut into squares. |
