Blackforest Gateau used to be my party piece when I was a teenager. Fiddly but oh so worth it. I bought some black cherry pie filling the other day - it must have been in my subconscious mind to make one!

Our plan was to make different coloured sponge cakes, cut them into blocks and rebuild a cake - minecraft style. I have: 300g sr flour 200g plain flour About 75g cocoa powder Plenty of caster sugar and icing sugar No baking powder
Plenty of bicarbonate of soda Loads of different food colouring

The sr flour would be enough for a sponge cake but all my recipes say to add baking powder which we don’t have
