Just popped a choc chip cake in the oven. I haven’t made it for years but you lot are a bad influence and it makes a change from my tablet. My OH and the girls at work get the benefit

From someone who doesn't use these things often - does caster sugar ever go out of date?

I have tidied my 'baking shelf and discovered flour and baking powder with out of date dates so binned them but also found caster sugar ( bloody been looking in the shops for weeks) with no date - probably been there for a couple of years but will it still be ok? It's soft enough

Sorry another question - my cake is still not cooked right in the middle after the allowed time so should I move to top shelf of gas oven or raise the temp? It's covered loosely with him foul as per instructions so don't want it to burn but be uncooked

Sugar won't go out of date, nor would baking powder. And if sugar's hard it's easy to soften it, just put is in a bowl and cover with a damp tea towel.

Flour might, especially if it's wholemeal, but you'd be able to tell by sniffing it (also worth sieving it to make sure there are no unwanted visitors there).

Cake: just leave it in and check after ten minutes?
