This is the cheesecake recipe. I don't think it needs the sugar adding to the biscuit base. I added all the lemon juice and about 3/4 of the sugar to the cream mix and that was plenty. lovefoodies.com |

I couldn't get any lemon curd for the top but the grated chocolate works really well.

I don't think it's quite the same as a cake made with All Bran would be. I imagine that would be much more dense. Whilst it's called bran loaf it's oatbran. Cheesecake looks lovely. I don't eat gelatin so usually do a baked one if anything and I like Anita Bean's. Wouldn't dare make one with just the two of us to eat it though! |

I improvise a cheesecake topping from fat free fromage frais and mascarpone: the mascarpone on its own would be too rich but the fromage frais tones it down a bit. I drain the fromage frais overnight beforehand to firm it up a bit, then adding lemon juice to the mixture makes a good texture, no need for gelatine at all. Quite partial to a base made of half digestives and half ginger biscuits too, or adding chocolate to the base if the topping is cherries.

I like bases made with gingernuts as well SK I can imagine that different brans or cereals would make a big difference to the texture of the cake LMH, but the recipe is the same, I shall try it with oats. |

I always make fridge cheesecakes, really don’t like baked ones. Lemon with a gingernut base is gorgeous, otherwise tend to use hobnobs or a half hobnobs half digestive mix..
