This morning's bread:
It's again noticeably lighter than any sourdough I remember buying - using Matthews Organic white flour rather than Allinson standard. Next one will be with some Shipton Mill flour, it'll be interesting to see whether it differs. I might do a comparison of covered vs. non-covered on a pizza stone too (so far I've used a casserole every time, plus a tray of water in the bottom of the oven).

I’m so impressed with the baking evidence here. I didn’t manage to get Demerara sugar or condensed milk when I was out today so there was no fudge making here!

We usually make our sourdough with Doves organic, Sally Kate. It's never been as good with Allinsons bread flour. I bet Shiptons will be very like Doves.
