Boiled Fruit Cake
Oven 150-170*C 1.25-1.5hrs
In a saucepan, put 1 cup black tea, 1 cup sugar, 8oz butter, 1lb dried fruit, half tsp salt, half tsp mixed spice, half tsp bicarbonate of soda, bring to boil, leave to cool. Mix in 2 beaten eggs and 2 cups flour (I assumed plain). Pour into lined 2lb loaf tin, cover with foil (I didn't read that bit) and bake as above - done when skewer/knife comes out cleanly.

Recipe from my mum's sister's friend and the first cakes I made unsupervised (apart from the boiling).

I don't I understand why you boil the bicarb, as it then won't rise in the oven, but who am I to question the authority of The Book!

I'm making fruit cake at the weekend. I liked DT's idea of having an emergency cake and fruit cake keeps so well for months.
I took some of my fudge into school for the staff to try. One of them asked if they could take some home as she really liked it. Phew - I'd thought it was too sickly, but it seems to have got the thumbs up. I'm going to try a different recipe next time which doesn't use condensed milk as it's too sickly.

2 questions cause it looks really nice : sugar - white or brown? Cup does it make a difference to what size of cup as long as you use the same one for the ingredients

I used Demerara, and cup measures - the cup says 240ml on. Any bigger and it would overflow.
