That looks lovely Lizzie.
DT - I have a recipe for 'bran loaf' that has no fat or eggs in. Very easy and makes a nice sort of tea bread that is good as cake or spread with butter, needs a bit of planning and fridge space though as you soak it overnight. Let me know if you'd like me to dig it out.
Flapjack will keep for a couple of weeks lf - no excuse not to bake
If I can manage it around work I'm going to be trying to bake a Sticky Toffee Banana cake today.
