It depends what you want to see in your log, Ness - your log, your training, your rules
If you want to compare interval pace across a block of training, then only having the efforts recorded makes that easier.
If every mile counts, then the recoveries - jogged or walked - get logged and comparing sessions isn't quite so easy

If you're able to set intervals on your watch then the rests are included in your log and separated from the efforts.
However each to their own and do what is comfortable or right for yourself.

Personally I always run/jog/walk my recoveries, it's all miles in the tank.

I found out how to set intervals on my watch but haven’t used it as I don’t think it will show pace at the same time.

ER that depends on your watch and how many screens are available to view. My Garmin has intervals as a separate screen and I can look at my watch to see pace etc.

Garmin Connect lets you set a pace band when you set up the workout. I uploaded it to my watch (Venu) which vibrates if I'm going too fast or too slow.
