I can answer the chain question - no special chain is required...

I use either a triple (for 3 Peaks CX) or a single chainring on the cross bike. I use a small and easy to install gizmo bought from Superstar components that stops the chain from dropping. There are quite a few easy and cheap options for chain tensioners or catchers, have a google.

OK so just as a test i clipped my shoe onto a pedal, just to see it work, now i cant get it off, is just because i'm not strong enough or is it more than twisting?
Yes its on the loosest setting.

I'm particular weedy, but I'd suffer the same - I'd struggle to get the cleat out of the pedal by hand. It's generally a lot easier when it's on the bike, so unless your pedal design makes it very awkward, attach the pedal to the bike, put your foot back in the shoe and it should more easily twist out.
