I love Parkin too and make mine with black treacle.

This is currently my favourite recipe though I usually increase the spices:

Parkin
220g medium oatmeal
100g plain flour
1 ½ tspn baking powder
2 tspn ground ginger
½ tspn Mixed Spice
¼ tspn ground mace
¼ tspn salt
200g Black Treacle
50g Golden Syrup
130g brown sugar
130g butter
25 g candied/crystallized ginger, finely diced (optional)
1 large egg, lightly beaten
2 tbsp whole milk
Generously grease an 8x8 inch baking pan and line the bottom with parchment paper. Preheat the oven to150C.
Place the medium oatmeal in a large bowl along with the flour, spices, salt and baking powder.
In a medium saucepan add the brown sugar, black treacle, golden syrup and butter. Heat the mixture until the sugar is melted (don't boil it) and remove from the heat. Let it cool for 5 minutes.
Pour the hot mixture into the dry mixture and stir well to combine. Add the candied ginger, egg and milk and stir well to combine. The batter will be liquid and sticky.
Pour the batter into the prepared baking pan and bake 70-80 minutes or until a toothpick inserted into the middle comes out clean. The cake should be fairly firm but springy. Let the cake cool in the pan then wrap in baking paper and store in an air tight tin for 3 days before eating.

Yeah, my recipe is pretty similar - but no spices bar ginger and no golden syrup. I actually use organic molasses, really nice and treacly.

The longer you leave it before eating the better. Lasts AGES - if you can resist!

I also adore parkin, and like sharkie use molasses, no golden syrup, usually just ginger spice-wise (and lots of it!)

TBH the recipe is 50/50 black treacle and golden syrup but it was raining out and the shops were just that bit too far.....
