I LOVE parkin. Mum used to post it to me! I never had her recipe but a few years ago I recreated it eventually arriving at something even more to my tastes - more medium coarse oatmeal, butter not 'Spry,' a mix of plain and rye flour, black treacle and probably more ginger than she would have used. She DID only use black treacle though - I always think it's more gingerbready with golden syrup.
