Does anyone have a reliable vegan cookie/biscuit recipe?

It is my team's turn to bring morning tea for our department meeting on Friday. I said I would make cookies, but my usual go-to recipe has eggs in it, and our chickens haven't laid in a while. Ideally a recipe without too many fancy ingredients that I won't have...

Courgette and cheese muffins with a bit of ham that needed using up, a good bunch of garden herbs and a decent crack of black pepper added compared to the recipe. Rather nice.

Rhubarb frangipane tart with a layer of my mother's homemade rhubarb and ginger jam under the frangipane and topped with a quenelle of strained buttermilk. Pastry was absolutely perfect if I say it though I shouldn't.
