Tumbleweed90 perfect pastry is something to be celebrated, of course you should say it! I've been known to do pretty damn good pastry myself. Love the combination - frangipane tarts are a favourite all too rarely eaten.

Looking for something to take away to Endure24, my usual malt slices were out due to a distinct lack of malt extract.

I made this ginger cake instead theguardian.com and it was absolutely delicious. Moist and sticky.

Me being me, I didn't follow the recipe exactly. No ground ginger so I used mixed spice instead and doubled the amount of preserved ginger. I also added about 150g dates which I found in the back of the fridge, soaking them in boiling water for about an hour first to soften them up.

The recipe alleges it serves "6 friends after a long walk" - they'd have to be very very hungry! I cut it into about 25 pieces.

Anything I ever make that has ginger in it never comes out gingery enough, doubling sounds the way to go....

I love a good ginger cake but I agree with Ocelot about the doubling of ginger in recipes. I find you can never have too much ginger.

It's my turn for coffee morning tomorrow after a couple of years off. I'll be making the cake I'd planned to 2 years ago - a blackberry and apple cake. The blackberries are still in the freezer, I hope they'll be okay.
