My guess is one of three things

a. I didn't have enough bread flour so used plain instead for part
b. I used the timer
c. Our friends are vegan so it was oil instead of butter.

I think the oil seeped down into the bottom of the pan in the time before the timer started the machine. It tasted OK actually. Wasn't nearly as dense as it looked.

Cupcakes went down well. Vegan lemon.

LindsD: sorry to hear about the bread - glad it tasted ok though.

I suspect it wasn't the oil - we've made bread that way for years (before I stopped eating dairy), and did it that way on time delay too. I just found that oil was easier and less messy to measure than butter.

I'd definitely suspect the flour.

Any suggestions for something nice as a way of using up egg whites which are contaminated with a bit of yolk? Worst case scenario it'll be adding a couple of whole eggs and making frittata but there might be something sweet I can make with whites which won't whip properly...

Weekend baking was confined to:

Sourdough (as usual for a Saturday)
Lemon drizzle cake
Greens & feta pie

Excess whites due to OH making herby lemony mayonnaise to go with barbecued shellfish on Saturday.

Cheese scones ambitions were stymied by a very late Tesco delivery (7.45pm instead of the expected 4pm).

Macarons or something that's a cross between a fairy cake/bun and a macaron? I've experimented using 1 egg with 7 or 8 tbs of egg white and minimal fat.
