Little Miss Happy
Does anyone have any nice recipes using brazil nuts? I must have bought them with something in mind but have no idea what. Will add them to my next banana bread but will still have more to use up.

There's a recipe I got from V'rap years ago for cherry cake which was vegan and gluten free, I remember it being really very good.

Daughter asked for hot chocolate souffles yesterday. I made them one year as a dessert for a birthday meal and they were very good: rich without being too heavy.

The recipe's a bit involved - you make both a chocolate creme patissiere and a chocolate ganache, mixing the two for the base before adding beaten egg whites - but it's so good. I made six rather than four, which is a better size for something like this I think.

Now, of course, I have five egg yolks the fridge looking to be used up - thinking I may make a crustless veggie quiche tomorrow.
