Egg cakes in the oven. Reduced the sugar from 150 grammes to 100 grammes to make them less sweet. Seems I must bulk out the other ingredients. As in add another egg. We will see how they turn out, but there are 10 in stead of the usual 12...

A Grauniad typo? 50 maybe?

Even as someone without a sweet tooth, it is one of my favourite types of tart and one I've not tried with apricot, which is one of my favourite fruits, so if Lewisham market is blessed with them tomorrow it's on the menu :-)

I find they’re one of those things that either works brilliantly, or I end up frustrated as I have just made a thick naan-like flatbread.. (still taste fine, just not pittas 😉) I tend to use my normal bread dough mix, roll out to a few mm thick, leave to rise for a bit on a tray, pre-heat oven to max and cook at the top for 5-10mins per side. I have also tried cooking in small dry frying pan on the stove top, covering with a lid to get steam/pocket formation. Again, mixed results, either brilliant or flat bread..
