Ok, so I'm looking at Veganuary (and maybe further)

I can change my breakfast Granola recipe to use Maple Syrup rather than Honey. I usually eat this with fruit and sometimes with Yoghurt, so could continue this way substituting with Soy Yoghurt when I want.

Lunch is usually Veggie wraps (Peppers, celery, cucumber, grated carrot, walnuts....) so no change needed there.

Just need some filling mains, I often do a Veggie Chilli, Linda McCartney sausages have recently become our sausage of choice, have done a lentil shepherds pie.

Would appreciate a few ideas for evening Dinners please.

I'm trying veganary this January and signed up for the emails. They've sent me the first week menu with three different 'plans' low, medium and high calorie. I've made a shopping list from there. I'm doing it this way as I want to learn how to cook vegan if that makes sense and also I don't really know how or where to start. Will be interested to see any replies you get Bob!

Quorn pieces for curries where you would normally use chicken. Quorn mince or lentil bolognese sauce.

But if you use Quorn, make sure the package specifies "vegan" - not all Quorn products are. Fry's products fryfamilyfood.com are vegan, taste like proper junk food, and are now easy to find in supermarkets.

Bob! Thai curry is an easy vegan meal we regularly have.
Thai curry paste (check it doesn't have fish in it)
Coconut cream
Stock or marmite

Veggies
Tofu or kidney beans, or neither

Serve with rice.
Also: veggie stir fry with cashews

Falafel
Dahl or kidney bean curry (just don't use cream or yogurt)
Burritos ( guacamole not cheese or sour cream)

Tempeh can be a slightly acquired taste. I thought I hated it but discovered that the trick is to boil it for 10 minutes (it looks as if it will fall apart but it won't) before adding it to the dish it's intended for. Good in stir fries, and my daughter uses it as a pizza topping.

Buy a bosh recipe book Bob instead of spending money on loads of processed rubbish. It’s so easy these days to follow an unhealthy vegan diet but it’s equally easy to
find 1000’s if recipes to cook fresh and easy vegan meals. It doesn’t need to be difficult.
