I've made the nut roast like Purps for tomorrow (with mulled wine and cranberry sauce instead of juice/jam). Jack Monroe has just published Vegan(ish) - the recipes are vegan but she doesn't expect all the people who use it to be. |

The bosh mushroom Wellington is easy to make and is really nice. I do t do alcohol so use cider vinegar instead of wine.

Got one Bosh book, it’s got some lovely recipes, but it’s not my favourite. I like the 2 Dirty Vegan books (Matt Pritchard used to be in Dirty Sanchez, completed a deca Ironman this year), he’s got a second TV series of vegan cookery programs coming out early January on BBC. Though they may only be BBC Wales. The Thug Kitchen books are quite good too. They’re American so all the measures are in cups and other weirdness. |

I have Vegan(ish) - lots of ideas for 'simulating' meat dishes, although Jack sort of gives up on bacon (implies that thin smoked aubergine strips work, but that would make the pretendy carbonara excessively complicated with lots of ingredients, so it's compromised a bit to keep it more simple). Lots of jackfruit. Haven't made anything from it yet, but that's partly because I'm not sure where to start. All looks good Made Aine Carlin's cashew cheese today (soak cashews, blitz with balsamic vinegar, herbs, salt and pepper - I added nutritional yeast too). Am Veganuarying with the intention of keeping going beyond that (I'm a lapsed vegan, and it's much easier now than it was then, so no excuse really).

Not a fan of jackfruit, seems to be the new falafel where it’s the only thing people can think of that is vegan. Widely used as a substitute for pulled pork but I really don’t like the taste of it.

Jackfruit is nutritionally pointless but marketed for its texture and presumably can be sourced cheaply and sold at a premium. My daughter and I had a jackfruit product as part of Christmas dinner. Looked like stuffing balls, tasted unpleasant, texture of squash balls.

There are loads of recipes on the internet too without buying a book. I did this for lunch last week and it was really nice, I just out some grilled vine toms and mushrooms on the side as well. olivemagazine.com |
