This batch of dough might be my best yet - it rose a lot more than any of my other sourdough doughs. Think I need a smaller oval basket as it's just a bit longer than my oval Le Creuset dish but I'll cross that bridge tomorrow when I bake it.

I put a question to Fetchies in my blog and LindsD suggested I put it here too. Here goes....

I am tempted to see I can get some ingredients for fudge making. One quick question... Do you have to have a sugar thermometer to be able to cook fudge?

There's a test - drop a drip into cold water and it should make a soft but not squidgy ball - if it's not ready the drop just dissipates or forms a soggy flake

It does help but you can also do tests by dropping small amounts of the mixture into cold water. Not ready: forms strings. Ready: forms a soft ball. Overdone: forms a crystalline ball.

At least, that's what I remember from childhood adventures in fudge-making.
