I liked the game as it was just needs to slow down finding or allowing us to rehide so it lasts longer.
Maybe you hide, get found, become a seeker, you find someone, you can then rehide?

It would be worth starting the game with more than one seeker, with one seeker you risk having a delayed start due to that person being ill/injured/someone who doesn’t run very often.

Starting with multiple seekers doesn't make sense to me at the moment when the "problem" was that the game was over too quickly.
I also prefer simple, and to me the simplest idea to slow the game down is the one above to limit the number of hiders that a seeker can find on any particular run.
I presume that would also be the easiest for Mr Fetch to implement, just stop checking for hiders when the nth is found, and n can be adjusted to give the required game length.

I do like the idea of only one hider found per activity!
It's simple Makes it more even between cyclists and runners and bikers (especially early on) Makes it more even between abilities - people who go further get less benefit early on
And of course it would slow down the early part of the game too.
