Please recommend me a pie dish. I'm very good at making pastry that cannot be removed from the dish, so I rarely make pie bottoms (or pastry) but I've had a specific request! Ceramic, enamel, glass, non-stick, perforated...?

LW for shortcrust/puff pastry (puff always bought, shortcrust usually homemade) I use our well-seasoned cast iron skillet pan, and love it for pies. I don’t blind bake the pastry, but always add the filling cold, then put in oven at hottest it’ll go for 10mins before turning down to GM6/200C…

OH likes using some small ceramic ramekins for individual pies hand raised using hot water crust pastry with no problems. Only other thing I try to make sure is that filling isn’t too wet, and will always err on the side of too thick/dry..

I’m making a plate meat pie for dinner tonight. Ruff puff pastry, line the bottom of the plate with pastry, fill with a mince, onion and gravy filling (cooked but cold) then pastry on top. It’s a family favourite.
