We started eating our Christmas cake at the weekend; we usually start it before Christmas as there's so much other food to eat from 25th. There's only the 2 of us so it takes some getting through. I'm nearly out of mince pies and won't make any, but I have another batch of sausage rolls to make on Thursday.

We rarely cut the Christmas cake before new year - it gets left until perishables have been eaten. I worked out the calories in a slice somewhere as it usually appears on myfitnesspal for supper throughout January
Ginger biscuits! - I knew there was something else to go on the list.
The bakers by mum makes these gorgeous really dark strong ginger biscuits sandwiched with lemon buttercream and I wanted to try to replicate them
