Our Christmas cake is chocolate and cranberry, should be cooked in the next 20 minutes, made Christmas puds at the weekend and going to make ginger Christmas cake tomorrow, I can survive on sweet foods 😋

Happy Birthday boy1!

I love xmas cake and can happily eat it for weeks and weeks which I often do as I make sure MiL bakes one too :-)

Mini Nicco is very talented.

Am feeling a bit brighter today and may finally attempt the gf stollen but that's probably about the limit of my remaining baking until Xmas Day when I need to bake a soda bread to take to MiL's to go with the fish platter she ordered.

Good looking baking (though my teeth are on edge just at the thought of eating the Malteser pudding!)

Baking plans for today / tomorrow:

Soft amaretti and cantucci as gifts (if they turn out well enough)
Sausage rolls (meaty and veggie)
Mince pies using last year's mincemeat
Possibly stollen too

I'd like a Yule log too but may leave that till next week.

The gf stollen is a success - my non gf husband says it tastes like ordinary stollen. The only thing I did differently from the recipe was to chop the marzipan into small pieces and scatter in the middle rather than making it into a log - I used about a half of the amount it said - I also included glace cherries as part of the dried fruit, just because I love them. Didn't have a lemon so none of that went in. Quite close to the original recipe for me.
