I think I'm out of suet. Does anyone know if there is such a thing as sustainable palm oil veggie suet? Our bubble buddy is veggie.

I don't think I've ever made stew and dumplings, though my Mum did sometimes when we were growing up. I guess it would work as a vegetarian / vegan version too.

I have used trex as vegan suet before. Put it in freezer for 30 mins and then grate. Works great.

You can get atora veg suet but cuthbert is keen on us ethically sourcing palm oil or avoiding it so doesn't want me to buy it again (has palm oil and no sustainability comment) and i want to respect that. I will certainly check out the ingredients in those alternatives.

This works as veggie/gf dumplings if you don't mind them being cheesy lf:
125g self-raising flour
1/2 tsp salt
60g unsalted butter, cubed
70g mature cheddar, grated

Heat the oven to 200C/180C fan/ gas 6. Mix the flour with ½ tsp salt. Add the butter and rub together with your fingers until the mixture resembles fine breadcrumbs. Stir in the grated cheddar then quickly mix in 4 tbsp cold water. Roll the mixture into eight balls. Put the dumplings on top of the stew and place, uncovered, in the oven for 15-20 mins, or until puffed up and light golden brown.
