leaguefreak thank you My mum makes awesome scones not sure I'd want to try for fear of embarrasing her!

that's the thing my mum makes terrible scones. I blame her for my failings. I used to be the same with shortcrust pastry for the same reason but at uni my housemate re taught me and I forgot my mum's evil ways. My mum was a school dinner cook and everything else she makes is awesome. Apart from scones and shortcrust pastry...
Perhaps I should stop trying with scones then get one of you guys to re teach me when lockdown ends. Need a scone-stalker anyone?

The secret with scones is to have a wet dough. It’ll be too wet to knead, which is great because you need to avoid kneading

I only started baking about 6 months ago and my scones have come out nice. I have used Mary Berry's recipe and it is very easy and they have come out nice twice so not a fluke.

I need to try lemon drizzle again, that was what I tried before the battenburg, it was raw in the middle! 🙈

Did you make it in round sandwich cake tins or a loaf tin? Loaf can take more cooking. Bottom of oven is obviously cooler than top and that can help with slower cooking. Tin foil over top can prevent burning

It was a loaf tin, next time it will have foil over it, and bake for longer!

Em - I don't cover mine with foil until it's the colour I want.
