Mincemeat cake for me this morning.
Gooner - you need to know that they are ok, you don't want to find out you don't like them mid ride! I have a recipe for something similar to flapjack that has a really good consistency you might want to try for a change at some point:
Chocolate Oaty Slice 200g butter 150g caster sugar 60g golden syrup 200g oats 200g self raising flour 50g unsweetened cocoa powder
Preheat oven to 180C. Line a 28 x 18 cm baking tin.
Melt butter, sugar and golden syrup over a medium heat until the sugar is dissolved.
Combine oats, flour and cocoa in a bowl.
Add wet to dry and mix well.
Press evenly into the tin and bake for 15 - 20 minutes until the surface appears slightly dry. Leave to cool in the tin before turning out and cutting.

LL - yes, just bog standard porridge oats, don't think jumbo would bind as well.

I've been.baking but too busy to post. This weekend I baked and had time to post but I've had a rare sponge cake fail. It is what my father would call a prisoner cake. You could slide it under the cell door!!!
Need to make a birthday loaf for my sister in law. Hope I have better luck with that!!
