That cake looks delicious LIzzie. I also had to make my own birthday cake which was a banana cake as we had a couple of bananas to use up. Yours looks much more suitable for a birthday cake though! Hope you had a good day too!

MrAtC, Hunter/gatherer extraordinaire, came home yesterday feeling very pleased with himself as he’d managed to find flour in our local shop. Unfortunately, he didn’t read the small print.

It’s Dove Farm gluten free self raising flour.
Has anyone used gf to make chocolate brownies? Is there a recipe that works well?
All help and advice appreciated :-)

Alice - ideally you need some xanthan gum to add to your flour as gf doesn't have the same 'stickiness' so any baking tends to be a bit more crumbly than usual but if you don't mind that just sub it for normal flour. As brownies are quite sticky anyway they are probably a good thing to try.

DT - I usually chop and freeze two in each tub as most of my recipes seem to need two bananas, just defrost and tip in once mashed - they tend to come out super sweet if you have frozen them when they are nice and ripe so you may want to decrease the sugar in your recipes a little. If you have a good blender frozen chopped banana is also good for pretend ice cream.

I just throw mine in as they are. They go black and runny but that's OK for banana bread.
