LindsD the perfect Guardian recipe is the one I've tried. It's not quite what I'm after. I used to buy far too much banana bread from a deli near college when I was a student and I think that's my idea of perfect banana bread.

Or maybe I'm just doing something wrong and it should turn out a lot lighter than it does!

It's gone down well with daughter anyway, and that was one of the main aims. Something for her lunchbox which doesn't come from a supermarket.

*sigh* I tried the BBC good food recipe above and it was a disaster. I suspect I put too much banana in -- I'll try it again with less and see what happens. It was a heavy uncooked mess in the middle and overcooked on the outside, so maybe the oven was too hot? Or too cool?

I used to be able to make cakes easily, once upon a time.

(As I bought too many bananas on the market I'll be trying again tomorrow. And making mini muffins for good measure - easy to freeze and perfect for daughter's lunchbox.)

I've used this recipe before with some success, I think it needed longer than it said from recollection although I will say it's been a long time since I made it.

Moist banana cake, easy to make and uses up overripe bananas.

Serves 8

Ingredients

2 ripe bananas (overripe is best)
170g caster sugar
170g self raising flour
170g soft margarine
3 eggs
Few drops vanilla essence

Preparation

Use a food processor. Pre-heat oven to 160C / gas mark 3.
Add all ingredients and blend until well mixed.
Pour into lined loaf tin.
Bake for 1 hour.
Cool, and enjoy.

Looking at it now it looks like a normal sponge mix with bananas added, but it was liked when I made it. :)
