We never got round to eating last year's Christmas cake (in fact I didn't even ice it) so I won't be needing to make that this year. And I have two Christmas puddings from last year as well.

I'm keeping quiet about the, erm, vintage of the Christmas pudding in our cupboard. I think it came from Birmingham with us when we moved in 2011.

My mother fed us a two year old Christmas Pudding once. It had turned to treacle like stodge. Not good, not good at all. Put me right off my pud for a few years. I've got round that now by making my Christmas Pud a month before Christmas and not a day later

It's from go faster food;
175g butter 280g golden syrup 225g mincemeat Grated zest of 2 oranges Large handful raisins (I forgot these) 425g porridge oats
Oven 170
Melt butter and syrup, then add everything else. If mixture too sloppy add more porridge.
Turn into lined swiss roll tin and bake for 15-20.
My son said it was like a bite of Christmas!

I like the sound of that, Star. Must give it a go. With all that fruit it must be nearly a salad so bound to be healthy 😜
