I made this apple cake theguardian.com on Saturday - really lovely. I used two Bramleys and a Granny Smith (just because I had them hanging around). The mix looked like mainly apple when it went in and I was worried it would be dry but no. Even I've been eating it and I don't really like cake!

Yes! Me too Might have a bake in tomorrow. Could do with that cake right now tho.
Linds I've not clue about vegan but googled out of curiosity, to see what's used in place of butter, had forgotten that sometimes I use canola or coconut oil anyway. I'd like to know what you come up with, the icing can't be easy 😮

I didn't bake cake today, although her actual big party is Friday, so I might for that.

Today I made vegan banana trifle, with cashew cream and vegan chocolate frosting. I liked it, but no one else did. I think SD did, though.

I'm currently soaking fruit ready for Christmas cake baking tomorrow. I've never been this organised before (the earliest I've managed before is whole week before Christmas), but our chickens are laying well and OH is away, so I thought this would be a good way to use up plenty of eggs :)
