Thanks M4P! That looks like the same approach as Nigel Slater, which was my next recipe to try.

Good luck sallykate

I don't like any mincemeat or dried fruit like raisins but grid and kids do so I might have to bake them for them.

I'm vegan so I'm mastering all things vegan baking!

Christmas cake in the oven.

Probably the 3rd different recipe I've used in 3 yrs because I can never remember the recipe I used the year before.

3 cakes in. Hopefully one will go to work tonight for some Guinea Pigs to test.

Cross with self, I made vegan chocolate tiffin, but misread amount of coconut oil - nearly twice as much :-0 - as well as very rich it's too sweet (even for me, & I like sweet) now want to make again with some amendment to taste. Also another caramelised banana slab, banana glut so next will be the sponge like recipe, know that'll be good too. Not Christmassy

Bananas freeze well if you can't face another cake now.

Quiet 🍰 🍞 🥖 thread these days, but I’ve just put two Christmas cakes in the oven, Delia’s last minute mincemeat cake recipe. I made them years ago when she was young, new to tv & her first books were published. One is nutless as it’ll be iced., marzipan at least pig

I only got round to making my Christmas cake a few days ago - opted for a scaled down Delia recipe.

Fingers crossed that my puddings from last year are still OK...

I'm going to make some soft amaretti to give to friends, plus have a go at fudge for the first time in several decades. I loved making it as a kid.
