Biscoff cake for a charity bake sale at work



Pretty easy recipe here: janespatisserie.com
My main issue was that I only have a hand mixer and it really struggled with the volumes and was getting very very hot.

I made parmesan shortbread biscuits yesterday, a Nigella recipe: theguardian.com

Used my stand mixer for mixing the butter, flour and cheese and added the egg yolk once everything was looking like crumbs. It worked really well, though I was a bit hasty in making the logs for cutting and some biscuits had holes in the middle.

Would def recommend these as festive nibbles. I might add more flavourings next time, a bit of mustard or smoked paprika or thyme.

There is some folding cash in the donation tin and also some donations to a just giving page.

We've been doing mimi bake sales all through GBBO, this is the final one and so far we have raised close to £300 for a local hospice.
