It's a thistle, although I like to call it by its 'fancy' name, onopordum
(Cardoon is one of the options we considered, but having seen it on Gardeners' World, decided it was just thistle. )
It literally grows from nothing each year, seeds, then dies. I have some seeds I collected if anyone would like them . . .

So far, sunflower is still alive. The second one has fallen over so I'll prop it up shortly.

I suspect I'll go home to find no trace of my sunflowers and a load of papier mache pots scattered around the town.

Fortunately the wind wasn’t too bad here. I’ve staked then now just in case. Tallest is about waist height.

Ours were slugged while I was away but will hopefully survive. The copper tape seems to attract slugs.
