Thanks for all the suggestions. I'll have a think and do some more searching.
I *have* thought of a better way of describing what I'd be using an MTB for.
Basically what you'd do on a gravel bike (or CX - same thing before anyone starts hitting me with geometry) with a bit extra.
I can't justify road bikes + gravel/CX bike + MTB + etc etc (I just don't have storage space either), so it'd have to be something that covers more bases.

For me, I resolved that with a 29er short travel hardtail with the same sort of thought process. For a time I put thinner tyres on for easier / faster road use, but eventually went back to MTB knobblies for convenience.
I may be wrong, but I think for £500-£800 you get more bike for your money in the MTB world than you would with a gravel bike.

I have tested Whyte bikes in the past and I simply do not get on with them. I can see how this "wrong" geometry "could" injure one long term, but we are all different and I can't see how Whyte bikes would injure people.

The thing I dislike about Whyte bikes is the stupid rubber grommets that hold the internal routing in place. Nasty, don’t come out easily and done go back in easily. Lazy engineering.
Front mechs are absolutely fine and yes, they will adjust properly even in a triple on an MTB. They tend to be shit on road bikes. The industry joke about SRAM going 1 x was that SRAM got rid of the front mech as they were shite at making them. Not really a joke.

As a relative ignoramus about MTB geometry, please could someone explain the "wrong" geometry bit, and what if anything I should consider to counteract it.
Can't really get my head around it. Can't really see how it could be "wrong". Just different to others?

I think ‘wrong’ geometry really means ‘wrong for my particular body’. We all have different proportions so not every bike will work for every body.

Not sure there is such a thing as ‘wrong’ geometry. Some bikes suit some rather than others. I know that a slightly longer reach than you would expect for my height suits me, for example. And I know Gobi prefers his MTBs to be all steep head angles and twitchy
