"Until late" is often meaningless. "Late" by whose reckoning? Put an actual time for fuck's sake, this isn't the middle ages, we aren't working with sundials, and dusk and dawn are no longer times unless you're meeting for a duel.

12 am would be 12 hours before mid-day, therefore midnight. I think.

On a 12 hour clock, 12 am is midnight and 12pm is midday.

Further to the vagueness of 'open until late', some places (usually pubs) say they are open all day, when in reality they open around midday.
