I was familiar with the 1:25000 map symbol, but the 1:50000 synbol is subtly different and I'd not seen it before

Yep, there are a few of those sprouted up around here too.
Why they are on good arable land and not where the derelict greenhouses are is beyond my u derstanding!

They are often on arable pasture. Where they can still be used for the same purpose at the same time.

I'll see if I can dig out photos of one in Kent I saw - they had sheep a-nibblin' around on the vegetation under the panels

Most of the ones I've seen in Devon & Cornwall are dual use. Sheep and solar.

We had a deep zigzag cut across much of our less useful arable land to put in high capacity cables for an offshore wind farm. It was a long project that left a lot of fields out of use for a couple of years.

Many of the new solar farms springing up locally are using the fields which were cloven in twain by that work.
