It depends on your rims. You could probably go slightly slimmer if you wanted but I don't think there'd be much advantage in doing so. I expect there are a lot more knowledgeable folk on here who can advise.

I have a question. A brand new Shimano Ultegra 11 speed chain costs less than £30. Wouldn't it make sense to replace it every six months or so rather than faffing around with degreasing and whatever?

If you've got £30 to burn compared to less than £1 to clean, fine!
Chain off, into empty milk bottle, add some solvent of your choice, slosh around a bit / leave overnight, rinse, dry, lube, refit - job done.
(Though obviously watch for chain wear and keep an eye on the cassette)

Got a nice result with 12yr old daughter's new bike. We've had Isalbikes in the past, but they are now silly money - £439 for the 24 incher. After selling her 20" on Ebay for not much less than we paid, I found a Squish 24 in Evans. Very similar spec but only £289. I reserved it and went to collect. We got there 25mins before the store closed, but the bike was the wrong colour.
The manager didn't want us to go away empty-handed so he told us to have a look at the range and see if there was something else. The only suitable and available bike was a Hoy Bonaly at £350. The manager offered it at £300, so we went for it. I built it up when we got home, and it's a really good kid's bike. Nice components and build quality. I'd say it's on a par with if not better than an Islabike.

Your chain suggestion GlennR: I always de-grease a new chain before fitting it, to remove the protective, dirt-magnet grease.
Citrus de-greaser from Halfords and a paintbrush or toothbrush.
