Has anyone ever tried coffee flapjack? I'm thinking of dissolving some decaff coffee in with the butter and maybe adding choc chips or walnuts.

It won't be today as I'm at work but I think I'll give them a try. I have a microwave flapjack recipe I can easily make a half or quarter of just in case it's inedible. Mind you I find most cake 'disasters' can be eaten with custard.

I made some shortbread when I was in Austria. They spread out on the baking sheet when in the oven but still tasted good. I asked my friend (the expert who taught me) what had gone wrong. She said she'd tried making them with GF flour once and they did that. The penny dropped, my sister gave me some extra flour as the first packet ran out and it was GF. It was obviously someone's leftovers.

Pix: whatkatysaid.com Great as you don't even need to heat the oven. I reduced the sugar to 75g and it was still very sweet so would probably try it with even less or maybe with one less tblspn golden syrup. I used an approx 8" x 8" pyrex dish. I flatten with the bottom of a tumbler and again when it first comes out of the microwave, give it a good squidge down. Left it about fifteen minutes to cool then marked into squares in the dish removing only when it was totally cold. I used 150g chopped dates rather than choc chips.
